Take chunks of chicken and/or steak and/or seafood along with chunks of white
onion, red bell pepper, Anaheim chilies, and marinate in tequila, lime juice, evoo, and a little crushed garlic and cumin. Take an old griddle or cast iron pan the put it on the outdoor grill heat until very hot or when oil smokes instantly. Grill the marinated mixture turning frequently. Serve with warmed corn tortillas & fresh pico de gallo. Don't forget the margaritas or dos equis (X X). Dimitri |

I'm going to marinate the fish (shoots, I need to get on that in the next few hours) with garlic, cumin, coriander, evoo, lime and then heat up a grill-type CI skillet. Cook, then slice and put in corn tortillas with cabbage and a mixture of avocado, tomato, cilantro, onion, lime & vinegar. Toss on some sour cream and that's my kind of food! My hubby can eat chicken or pork and like it! Hah! (Okay, maybe I'll marinate his food, too. We had:
corn puding with jack cheese and green chiles chips, salsa, and chile con queso (all homemade) taco salads...they were going to be burritos, but I was in a salad-y mood so the stuffing went over romaine instead.....lettuce, tomatoes, scallions, cilantro, pinto beans, guacamole, sour cream, cheddar and cotija cheeses and forzen cuervo 1800 margaritas |
