Default What to do with Medlar fruit!

hello,
We have a medlar tree in the garden, and I have read on the internet
that it makes wonderful preserves - but have failed to find a real
recipe. Can anyone suggest a recipe for me to try with these? I
understand that they must be left to become almost rotten. I have no
real experience with preserving, so I would appreciate a detailed
recipe - if anyone could be so kind. Thanks again.
