Hi
The freezer is maintaining -20C which is nice and healthy, but the cereal bars I made are, although cold, have not turned to ice. Water content is low, theyre semi-dry, and the liquid is hot fruit juice with dried fruit put in it, so will be concentrated in sugar, hence theyre not going hard with ice. Are these safe to keep for months like this? Or is the solidifying ice part of the preserving process? Thanks, NT |
