Default Canning Pickles Question

HI,

Today is the three week mark for my brined pickles. I have 5 gallons
of them so I'll only be able to eat them so fast. What are my options?
How long will they last in my fridge? What's the best way to store
them in my fridge? I'd like to process a lot of them so I can enjoy
them over the winter, but I don't like them when they get soft. Can I
use a low temp pasteurization process?

Thanks!!

Ryan
