I can buy egg plant pretty cheap right now and have just made up a bunch of
George's moussakka....question....If I make baba ghanouj, can it be frozen? Kathi |

If you make it "Arab style" with techina, sure. You may have to wait for it to thaw, and run it through the blender to get the consistency you like as the oil will seperate. If you make it "Israeli" style, with mayonaise, forgetaboutit. :-) You could just cook the eggplant, mash it up in a blender and freeze it. Then when you thaw it, you can add fresh techina to it. Never tried to freeze it but my Arab friends told me it couldn't be done and preserve the flavor and texture. |
