Kirby and other pickling cukes are out of my price range this year.
How about zucchini pickles and relishes? How do they come out? I have
seen recipes for them, never had or made them. I can get zucchini
cheap cheap cheap the next few weeks.

Gosh I love pickles. I only put up a few quarts and a bunch of pints
last season, ran out in January or February. I was depressed. Nothing
like some snazzy pickles to cheer up a winter cheese sandwich.

If the zukes are fairly young, not very seedy, and fresh, they make
excellent pickles. There are specific recipes available for zuke pickles
but I've found they can be used in about any pickle recipe.

Might keep your eyes peeled for green tomatoes too, they make excellent
pickles of all kinds.

Use zucchini (about 1" - 1-1/2" diameter) in a bread and butter pickle
recipe. I don't know how/if they'd work as spears.

Snow, there's also recipe for Barbecue Relish in the Complete Book of
Small-Batch Preserving that uses zucchini instead of cucumber.s

I really don't like spears unless they are half sours, I am crazy
about B+B and dill slices. Thanks to you and George for the tips on
how to pick them out. I'd just have got a couple of honkin' biggish
ones.

Yep that's one of the things on the Zucchini To Do list! I just love
that book.

Brian that sounds delicious! I love all kinds of chutneys. Thanks for
the recipe.

nononononononosnow.

Pick them when they're 1-1/2" diameter if you want to pickle them, and
stick them in the fridge until you have about 20 of them - probably not
more than a couple days if you have as many as you say. :-) If you
let them get past that size, the next day they'll be bigger than you
want them for pickling.
