Hello everybody
I read here a lot but rarely post, but now I have a slight problem,I pressured canned bell peppers in 1/2 pt. jelly jars but I forgot to add any vinegar as the blue book says to. So how much of a sin did I commit? can they still be used? When I realized what I did while they were cooking so I processed them about 10 minutes longer than they said too. |

It depends upon how long you processed the peppers Dave. Here's the URL for instructions on canning peppers in a pressure canner. http://nchfp.uga.edu/publications/uc...is_peppers.pdf The recipe doesn't call for vinegar, only water. Using the proper processing time is critical for your health. Hope this helps. George |
