Default Persimmon cake

Getting ready to make a persimmon cake this morning. Pulled a bag of
pulped 'simmons out of the freezer two days ago and into the fridge to
slowly thaw. Was looking at the bag and we had pulped, deseeded, and
vacuum bagged these persimmons four years ago. Looked in the freezer
again and still have six more bags in there. Now I'm going to have to go
through the freezer and rearrange everything and make a list so I know
what we have. I think there's some vac bagged chard and broccoli that
may be older than the persimmons. Of course there's nothing wrong with
it but I do need to get the older stuff out to the front.

A beautiful day in Harris County, Texas. We've had plenty of recent rain
and more coming and the gardens are growing like they are wild plants.
Harvesting squash nearly every day and getting a few cucumbers each day,
time to harvest the chard again before it starts bolting in the heat.
The dwarf barbados cherry trees are covered with blooms, might get
enough fruit this year to make a small jar of jelly. Figs are getting
bigger and, this morning, the kumquat tree is covered with blossoms.
Lots of various bees and also a lot of bee flies. We got acquainted with
bee flies some years ago when the honey bees were in decline. Was the
first time we had seen them but they look just like a skinny house fly
but are pollinators and work hard at it too. No wonder everything in the
garden is producing.

Can you make persimmon jam? I've never had it but the idea sounds
delicious.

Yes, did it once, wasn't fond of it, didn't try it again. Now I have no
persimmons unless I can find some place to pick them and there are
several places for that. I'm to used to getting free fruit from
neighbors who didn't pick whatever was growing in their yards, don't
find any of that here as yet.

Is it still cold up yonder in the mountains? Hot today with a good bit
of rain again, we're approaching eight inches of rain for the week
pretty fast with more to come.

We're getting a few days in the high 80s alternating with
cool/cloudy/rainy. I think it's gonna be a hot summer once our
afternoon monsoon period ends. :-(

We finally planted our small garden yesterday--tomatoes, yellow
zucchini, and flowers for table bouquets (zinnias, snapdragons. blue
salvia_ and patio pots. We came home from our Ireland trip to find
the grass in the flower beds knee high and our beehive in the middle
absolutely swarming with bees who weren't impressed with our need to get
rid of the weeds.

We are waiting for the beekeeper to come back from a business trip so we
can strategize a new location for the hive so we can keep the garden
weeded without the too-real danger of getting stung. (My husband is
allergic to stings, I'm not but don't relish the thought.)
