Default Peach vs Mango Jam question...

Does anyone know how mangoes compare with peaches in terms of pectin?

I have a mango jam recipe I want to substitute peaches for, since the
mangoes here are yucky right now (and the peaches are so very yummy)!

Will a straight substitution work?

The recipe I have has other fruit (strawberries and raspberries) in it
besides just mangoes.

The reason I don't want to use mangoes is because they are not very
nice in this area right now, but I thought peach might be a good
substitute.

Barb, it does use commercial pectin, as well as citic acid and lemon
juice.

If you think a straight peach substitute will be OK, I will toss
caution (and my berries) to the winds and go a'jammin

Thanks for the link, looks interesting. I have been looking for
something like that, but didn't see that particular page.

What is your Mango-Strawberry Jam recipe?

I really appreciate your help in tweaking this recipe to work with
peaches. A friend of mine made it (the mango version) a couple of
years ago, and it was soooooo good.

For your viewing pleasure. What I made this year didn't have kiwifruit.
Finding mangoes and kiwifruits ripe at the same time is a real trick!

Barb Schaller's Mango-Strawberry Jam with Kiwifruit

Recipe By : Barb Schaller Herself - An Original, which is why you
have to keep my name with it when you pass it on! :-0)
Serving Size : 1 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

2 cups diced mango (1#)
1 3/4 cups mashed strawberries
3/4 cup diced kiwifruit
1/4 cup lemon juice (actually, I like lime)
1 tsp citric acid
7 1/2 cups sugar
2 pouches Certo brand liquid fruit pectin

Follow liquid Certo instructions for cooked Strawberry Jam. (Combine
fruits, sugar, acids; boil, add Certo; boil -- that stuff). Makes about
9 half pint jars.

Per serving (excluding unknown items): 5820 Calories; 0g Fat (0%
calories from fat); 0g Protein; 1504g Carbohydrate; 0mg Cholesterol;
16mg Sodium
Food Exchanges: 97 1/2 Fruit; 100 1/2 Other Carbohydrates

NOTES : Source: Made it up for 1996 State Fair. Best stuff I made all
summer; it didn't win a thing at the Fair. Humbug! But it did win
First Place in 1997!! But not in 1998.

I think Ma Pickle won a prize at one of her Oregon or Washington fairs
with it, too. Pretty cool.
