Does anyone know how mangoes compare with peaches in terms of pectin?
I have a mango jam recipe I want to substitute peaches for, since the mangoes here are yucky right now (and the peaches are so very yummy)! Will a straight substitution work? -Andrea |

Barb, it does use commercial pectin, as well as citic acid and lemon juice. Thanks for the link, looks interesting. I have been looking for something like that, but didn't see that particular page. What is your Mango-Strawberry Jam recipe? I really appreciate your help in tweaking this recipe to work with peaches. A friend of mine made it (the mango version) a couple of years ago, and it was soooooo good. -Andrea |
