Yes, I have a model 50. In the past day it turned 8 lbs of jalapenos
into chipotles and Q'ed a whole bunch of brisket.

If i were you, instead of putting the money into the stainless steel
covering you should get a larger unit, as in model 50. It's more
versatile than the smokette and it has much larger capacity.

The stainless steel is nice, but it's not required. I live near the ocean
and after 2 years the black matte surface is holding up just fine.

Cabellas is the best I know of right now.

If you like to cook you'll love the thing. I even use it
as a holding oven when cooking for events. It's the most
versatile piece of equipment I own.

Thanks for the advice. I'll probably pass on the stainless steel. The
model 50 looks nice but $795 is a bit more than I can justify. Any
leads on a discount source for them?

bakery "proofing" cabinet for dough etc..

you can get one at a used Resturant supply house and
add a brinkman elec. smoker element, probably cost
you around $100-200 for everything.

I believe the brinkman is preset, adding that to
a larger insulated cab. like a proof box would
really be simple. but if its needed a therm is
$30-40 at a refig. or appliance supply.

That sounds like an interesting project. Should be simple enough to do.
Finding the cabinet is the only big issue. I cruised eBay to see what
I could find. There were a couple of used proofing cabinets but they
were in the $800 - $900 range. I'll check around locally to see what is
available.
