The stainless steel is nice, but it's not required. Thanks for the advice. I'll probably pass on the stainless steel. The model 50 looks nice but $795 is a bit more than I can justify. Any leads on a discount source for them? That sounds like an interesting project. Should be simple enough to do. Finding the cabinet is the only big issue. I cruised eBay to see what I could find. There were a couple of used proofing cabinets but they were in the $800 - $900 range. I'll check around locally to see what is available. Dan |
