If i were you, instead of putting the money into the stainless steel covering you should get a larger unit, as in model 50. It's more versatile than the smokette and it has much larger capacity. The stainless steel is nice, but it's not required. Thanks for the advice. I'll probably pass on the stainless steel. The model 50 looks nice but $795 is a bit more than I can justify. Any leads on a discount source for them? That sounds like an interesting project. Should be simple enough to do. Finding the cabinet is the only big issue. I cruised eBay to see what I could find. There were a couple of used proofing cabinets but they were in the $800 - $900 range. I'll check around locally to see what is available. Dan |
