Default Updates on yesterday's projects

The "Pickled Beets with Red Wine" appear to have turned out fine. I
only had 4 1/2 pounds of beets so I have some syrup left. Wonder what
else it might go well with.

The "Rhubarb-Orange Jelly" also turned out well. The rhubarb juice
was a nice rose color. The Valencia orange juice was a beautiful
orange, not the light color I so often fine. It also appears to have
set.

I am going to modify the recipe and will post it soon.

Susan's Rhubarb-Orange Jelly

Recipe By :Susan Ness
Serving Size : 0 Preparation Time :0:00
Categories : Canning, Preserves, Etc.

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 cups rhubarb -- chopped
2 cups water
1 1/8 cups orange juice -- freshly squeezed
1 each pectin -- powered, 1 3/4oz
4 cups sugar

Combine rhubarb and water and cook over moderate heat for about 15
minutes. Strain both juices through a jelly strainer or several
layers of cheese cloth. Measure 2 cups rhubarb juice, add the orange
juice and stir in pectin.

Set over high heat and bring to a full boil, stirring frequently.

Add sugar and bring again to a full boil, stirring constantly. Boil 1
minute. Remove from heat and skim.

Seal in hot sterilized glasses and boiling water bath for 5 minutes
for 1/2 pints.
