Date Pinwheel Cookies
2 cups dates (1 pound) 1 cup white sugar 1 cup water 1 cup chopped nuts 1 cup shortening 1 1/2 cups brown sugar (firmly packed) 3 eggs beaten 4 cups of sifted all-purpose flour 1/2 tsp salt 1/2 tsp baking powder Filling: Put first 3 ingredients in a saucepan and cook over medium heat until thick. Add nuts and cool. Pastry: Mix remaining ingredients to form a dough. Roll out to about 1/8th thickness into a large rectangle. Spread with date mixture. Roll from long end into a log and refrigerate for several hours. Using a very sharp knife slice into 1/2 inch cookies.
