I've made these a few times through the holidays for various
"appetizer" parties, and they were well recieved. Here is my recipe. Some of the smounts of stuff I use is just "eyeballed" so bear with the amounts. Eat them hot!! Sweet and Sour Sticky Wings 2 lb chicken wings, jointed and wing tips removed 1 lb brown sugar 3/4 cup soy sauce (I like light soy) a couple green onions (scallions) close to 3 cups cubed fresh pineapple (canned could be used) a dash of red pepper flakes (1/2 teaspoon?) dash of parsley flakes for added color Preheat oven to 350. Put the cut wings in a flat casserole pan, try to lay them flat, but not ultra-important. Mix the brown sugar and soy sauce in a pan over very very low heat. stir until it becomes syrupy. It should only take a few minutes. Add the pineapple, red pepper, diced green onion (chop the whole thing, stalk and all), and the parsley flakes to the pot. Let it cook on the low heat for maybe 5 more minutes, not to cook it fully, just to blend the flavors. Pour the sauce over the wings evenly. cover the casserole pan with aluminum foil. Important step here!! The sauce while cooking will bubble and grow. Make sure you have a layer of foil or a cookie sheet underneath the casserole pan in the oven otherwise you will have a large brown mess on the bottom of your oven. Cook the wings for about 30 minutes, stir them around at this point with a large spoon. Continue cooking for another 30 minutes for a total of one hour. Once done, take the pan out and test for doneness.. They should almost fall off the bone at this point. because the sauce is SO messy, I use a tongs and take all the wings out and put them in a new pan. Be sure to get all the cubed pineapple out and add it to the new pan. Also spoon an amount of the sauce into the serving pan as well.
