Default Near Kheer Rice Pudding

Near Kheer Rice Pudding

This rice pudding, using medium grain rice,
tastes similar to what you get at an Indian Restaruant,
but it has a thicker consistancy.

Makes: 4 cups
Prep Time: 5-minutes
Cook Time: 25-minutes
Ready In: 30-minutes
Servings:

1 (14-oz) can of coconut milk
1 (14-oz) can of evaporated milk
1/2 cup water
1/2 cup medium grain rice
1/4 cup granulated vanilla sugar
1/4 cup raisins
1/2 tsp ground cardamom


In a 3-qt coverd saucepan, add coconut milk, evaporated milk, water
and rice. Stir well and bring to a low simmer. Cover and simmer for
20-minutes.
Add vanilla sugar, raisins and cardamom to rice pudding in saucepan.
Stir well and simmer, uncovered for 5-minutes more, stirring
occasionally.
Remove from heat and serve warm or chill before serving.
