Default Fried Green Tomatoes

Fried Green Tomatoes

green tomatoes
salt
flour
mild vegetable oil

Select green tomatoes that have not begun to ripen. Slice them and
sprinkle each side lightly with salt. Dip them in flour to coat both
sides. Fry in a mild vegetable oil at a medium temperature in a cast iron
skillet (cast iron, although not necessary, is best to maintain a constant
temperature). They require constant attention. Turn frequently slice by
slice to prevent burning. Cook until golden brown and very soft when
pierced with a fork. Drain on paper towels.
