Chocolaty Frozen Mint Dessert
2 cups crushed chocolate graham crackers 1/3 cup butter or margarine, melted 1/4 cup sugar 1/2 gallon chocolate chip mint ice cream, softened 1 cup semi-sweet chocolate pieces or 1/2 cup milk chocolate pieces and 1/2 cup semi-sweet chocolate pieces 1/3 cup butter or margarine 1 cup sifted powdered sugar 12 oz can evaporated milk (1 1/2 cups) 1 tsp vanilla 8 oz container frozen whipped topping, thawed In a bowl, combine crushed graham crackers, 1/3 cup melted butter or margarine and sugar. Press into bottom of a 15x10x1 inch pan. Set in freezer to chill for 5 minutes. Cut ice cream into 1/2 inch thick slices and lay over crumbs. Cover and return to freezer. For chocolate sauce: in a saucepan, melt chocolate and 1/3 cup butter or margarine. Add powdered sugar and milk. Cook and stir for about 20 to 25 minutes till slightly thickened. Stir in vanilla. Cool sauce completely. Pour chocolate sauce over chocolate chip mint ice cream and return to freezer for about 30 minutes or till firm.
