Default Sweet Potato Biscuits

Sweet Potato Biscuits

Yield: about 2 dozen

2 cups mashed, cooked sweet potatoes
1/2 cup molasses
1/4 cup shortening
2 1/2 cups flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup buttermilk

Preheat oven to 425 F. Mix sweet potatoes, molasses and shortening
in a large mixing bowl. Sift in dry ingredients. Stir in milk, mixing
thoroughly. Knead on a floured board until dough can be rolled out about
1/2 inch thick, and cut biscuits. Bake on a lightly oiled baking sheet
about 15 minutes, or until golden brown.
