Oven Fried Rice

2 cups rice
4 cups water
1/4 to 1/2 cup oil
1/2 cup chopped onion
1/2 cup chopped green pepper
2 Tbsp soy sauce
1 pkg onion soup mix
1 can mushrooms, undrained

Combine all ingredients. Place in large casserole and cover. Bake at 350F
for 1 1/2 hours or until rice is done.
