Raisin Filled Cookies
For the cookies: 1 cup shortening 2 cups sugar 2 eggs Approximately 5 1/2 cups flour 1 tsp. salt 4 tsp. baking powder 1 tsp. soda 1 cup milk 2 tsp. vanilla Cream shortening and sugar together. Add vanilla. Add eggs and beat until fluffy. Sift flour. Measure and add salt, soda, and baking powder. Sift again. Add sifted dry ingredients alternately with milk. Stir until smooth. Add more flour if necessary. Chill dough for several hours in refrigerator. Turn out onto lightly floured board and roll to 1/8-inch thickness. Cut with round cutter and place 1 inch apart on a greased cookie sheet. Spread with the following filling: 2 cups raisins, ground or chopped fine 1 cup sugar 1 cup water 2 Tbsp. flour 1/2 cup chopped walnuts Combine ingredients and cook until thick, stirring constantly. Cool before spreading on cookie. Put a teaspoon of filling in the center of each and cover with another round of dough. Press edges together. Bake at 400 degrees for 10-12 minutes. Makes 4 dozen filled cookies, or around 8 dozen shaped cookies (depending on the size of your shape cutters). -- Rec.food.recipes is moderated by Patricia Hill at .
