![]() Lime Chicken If your chicken pieces are very large, cut them into serving pieces; 1 and one-fourth pounds of meat is plenty for four people. 2 tablespoons olive oil or vegetable oil 4 boneless, skinless chicken breast halves, about 1 and one-fourth pounds 2 cloves garlic, minced, about 2 teaspoons 3 tablespoons honey juice of 2 limes 1 tablespoon soy sauce one-half teaspoon salt one-fourth teaspoon ground ginger one-eighth teaspoon (or a pinch) cayenne pepper Heat oil in a skillet over medium-high heat. When the skillet is quite hot, add the chicken and cook about three minutes on one side, or until it is nicely browned. Turn chicken over and add garlic to the pan. Lower heat to medium low. Combine honey, lime juice, soy sauce, salt, ginger, cayenne and 2 tablespoons water, stir, then scrape into pan with chicken. Simmer five minutes or until chicken is cooked through (overcooking chicken makes it dryer). Remove chicken to plates and allow sauce to cook a little more to thicken it slightly, stirring with a spoon to loosen all bits of chicken and brown bits stuck to the bottom of the pan.
