No Hastle Shepards Pie - Irish Variation
1.5 lbs Potatoes - 1 lb ground beef 6 oz beef consume 2 15 oz cans mixed vegetables 1 15 oz can corn 1 Tbsp minced garlic 1/2 minced or chopped onion 8 oz cheese - 4 cheese mixed 2 Tbsp butter 2 Tbsp flour salt to taste pepper to taste Brown the ground beef and drain the grease. Drain the mixed vegetables. Mix the garlic,onion, mixed vegetables and seasonings into the ground beef. Over a low flame, stir in the beef consume. When thoroughly mixed, add the flour and butter. Simmer until the desired consistency is achieved. In a 9 by 13 cooking dish, add and spread the mixture evenly. Drain the can of corn. Spread the corn evenly on top of the mixture. Set aside to cool. Preheat oven to 325 degrees Boil and mash the potatoes. I add a half a tsp of salt, two Tbsp of butter and three quarters of a cup of milk. Spread the mashed potatoes evenly over the ground beef / vegetable mixture. Sprinkle the cheese on top of the mashed potatoes. Place into the oven and bake for 40 minutes. Preparation and cooking time, 1 hour. This recipe is for people with a limited amount of time or just plain lazy (like me). Feeds 4 to 6 -- Rec.food.recipes is moderated by Patricia Hill at .
