Chicken with Orange Winter Squash and Zucchini

14 ounces orange winter squash - cut into sticks (such as butternut)
1 large zucchini - cut into sticks
1 tablespoon butter
2 slices Canadian bacon or strips of lean turkey bacon, chopped
2 chopped skinless chicken breasts
2 chopped tomatoes
1 tablespoon chopped fresh lemongrass

In separate containers/pans microwave or steam until just tender. Melt
butter in a saucepan. Add bacon and chicken. Stir over medium heat until
bacon and chicken is cooked. Add tomatoes. Cook for 2 minutes. Add
lemongrass, zucchini and winter squash. Toss to combine, and serve
immediately.
