Sugar-Top Coffee Cake
Yield: 1 8 inch square pan 1 egg 3/4 cup sugar 1 Tablespoon melted butter or margarine 1 cup dairy sour cream 1 teaspoon vanilla 1 1/2 cups sifted flour 2 teaspoons baking powder 1/4 teaspoon baking soda 3/4 teaspoon salt 1/2 cup brown sugar, firmly packed 2 Tablespoons flour 1/2 teaspoon cinnamon 2 Tablespoons softened butter or margarine Beat egg in bowl with electric mixer at medium speed until frothy. Add sugar and 1 Tablespoon butter, beating until light and fluffy. Add sour cream and vanilla; blend well. Sift together 1 1/2 cups flour, baking powder, baking soda and salt. Stir into sour cream mixture; blend well. Pour into a greased 8 inch square baking pan. Combine brown sugar, flour, cinnamon and butter in bowl; mix until crumbly. Sprinkle over batter.
