Tomato Soup Cake or Spice Bread

1/2 cup butter
1 cup sugar
1 can tomato soup
1 egg
1/2 teaspoon cloves
1 cup raisins
1 teaspoon baking soda
1 teaspoon baking powder
2 cups sifted flour
1 teaspoon cinnamon
1 teaspoon nutmeg

Cream sugar and butter. Add egg into mixture. Sift ingredients
together, alternate with tomato soup, add raisins and nuts. Pour
mixture into loaf pan which has been greased and floured. Bake 1 hour
at 350 degrees. Test with toothpick. Cream Cheese Frosting is
recommended.

Tomato Soup Spice Bread


1 1/2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon cloves
1/2 teaspoon nutmeg
1 cup butter
1 pound light brown sugar
2 eggs
10 1/2 ounce can tomato soup and enough water to make 2 cups
1 cup dark raisins

Sift together (then set aside) : baking soda, cinnamon, cloves and nutmeg
In large bowl, with mixer cream butter until light. Gradually add light
brown sugar and beat well. Add eggs and beat until fluffy. Combine in
separate bowl can tomato soup and enough water to make 2 cups. Mix at low
speed, add flour mixture to butter and sugar ingredients. Alternate flour
and tomato soup, ending with flour mixture. Beat until combined. Fold in
raisins. Grease and flour 3 bread pans. Pour mixture into pans. Bake 55
minutes (or until tester comes out clean in center of loaf). Bake in 350
degree oven. Cool in pans a few minutes then turn out on cooling rack.

Spiced Raisin Nut Bread

Yield: 1 loaf

1/4 ounce package active dry yeast or 2 1/2 teaspoons
1/4 cup warm water
2 1/2 cups all-purpose or bread flour
1/2 cup whole wheat flour
1/4 cup granulated sugar
1 Tablespoon wheat germ
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/8 teaspoon baking soda
1/8 teaspoon ground cloves
1 large egg
2 Tablespoons vegetable oil
10 ounce can tomato soup
1/2 cup walnuts, chopped
1/2 cup raisins

Dissolve yeast in warm water; set aside.
In a bowl combine flour, whole wheat flour, brown sugar, wheat germ,
cinnamon, allspice, nutmeg, baking soda, cloves, egg, oil, and tomato
soup (undiluted). Add the yeast mixture and knead until smooth and
satiny, about 10 minutes. Knead in chopped walnuts and raisins. Allow
to rise, covered, in a warm place for 2 hours.
Punch down; place in a greased loaf pan, and allow to rise until
doubled in bulk, about 1 hour. Bake at 350 degrees F for 20 to 30
minutes, or until golden brown.
