Default Cranberry Oatmeal Cookies

Cranberry Oatmeal Cookies

1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup butter
1/4 cup shortening
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
2 cups rolled oats
1 1/2 cups dried cranberries
1 cup coarsely chopped toasted pecans

Preheat oven to 375 F. In a medium mixing bowl combine flour, baking powder
and baking soda. Set aside. In a large bowl, beat butter and shortening with
an electric mixer on medium speed for 30 seconds. Add brown sugar and sugar.
Beat until combined. Beat as much of the flour mixture into the sugar mixture
as you can with the mixer. Stir in remaining flour mixture. Stir in rolled oats,
dried cranberries and pecans. Drop dough by rounded teaspoonfuls 2" apart onto
ungreased cookie sheet. Bake for 9-11 minutes or until edges of cookies are
golden. Cool cookies on a wire rack.
