Sole in Tomato Sauce

Recipe By : Betty Crocker's Low-Fat
Serving Size : 4

1/2 cup sliced fresh mushrooms
1/4 cup dry white wine
1/2 teaspoon dried thyme
1 tablespoon tomato paste
1 1/2 cups chopped tomatoes (about 2 medium)
1/4 cup chopped onion (about 1 small)
1 clove crushed garlic
8 thin sole fillets (about 1 pound)
1/4 teaspoon salt

Heat mushrooms, wine, tomato paste, tomatoes, onion and garlic to boiling
in 10-inch nonstick skillet; reduce heat to medium. Cook uncovered about
10 minutes or until slightly thickened. Sprinkle fish fillets with salt
and remaining thyme. Roll up fish. Place on tomato mixture in skillet.
Cover and cook over low heat about 15 minutes or until fish flakes easily
with fork.
