Pigs in the Blanket (Crock Pot version)
1 lb. ground beef, ground pork or combination of the two 1 small onion, chopped 1 egg 1/2 cup rice Salt and pepper to taste 6 large cabbage leaves Remove the cabbage leaves from head of cabbage taking care to leave leaf in one piece. Immerse leaves, three at a time in large pot of boiling water about 3 minutes or until leaves are limp. Drain well and let cool a bit so they are easier to handle. Mix together ground meat, onion, egg, rice and seasonings until well blended. Divide meat into 6 parts and form into balls. Place meatball on bottom edge of cabbage leaf and roll up like an egg roll or a burrito. Place in crock-pot. Continue until you have all meat rolled up in cabbage. Add water to crock pot to barely cover your pigs in the blanket and cook on low for 6 - 8 hours. Remove pigs in the blanket to serving dish.
