Hawaiian Spareribs
4 lb meaty pork spareribs, cut into serving-size pieces 1 cup packed brown sugar 3 Tbsp cornstarch 1 cup vinegar 3/4 cup chili sauce 3/4 cup water 1 8-oz can crushed pineapple 1/2 cup finely chopped onion 3 Tbsp soy sauce 1 Tbsp yellow mustard Line a 15x10x2-inch roasting pan with foil. Arrange ribs, meaty sides down, in a single layer in pan. Cover and bake in a 350 F oven for 45 minutes. Meanwhile, for the sauce, in a 2-quart saucepan, stir together the brown sugar and cornstarch. Stir in the vinegar, chili sauce, water, undrained pineapple, onion, soy sauce and mustard. Cook and stir over medium heat until thickened and bubbly; cook and stir 2 minutes more. Remove roasting pan from oven. Drain fat from ribs. Turn ribs, meaty sides up. Spoon 2 cups of the sauce over the ribs. Reserve remaining sauce in saucepan. Cover ribs and bake about 45 minutes more or until ribs are tender. Remove ribs to a serving platter. Heat sauce in saucepan; serve with ribs.
