Default Shrimp Linguine

Shrimp Linguine

3 small onions, chopped
1 (28 oz) can diced tomatoes
1/2 teaspoon crushed red pepper
2 teaspoons dried oregano
1 tablespoon Olive Oil or Vegetable Oil
1/4 cup chopped parsley
5 garlic gloves, finely chopped
1 lb large shrimp
3/4 lb Linguine
1/4 teaspoon sugar
1/4 teaspoon black pepper

In a large non-stick skillet, heat oil and add onions and garlic. Saute for 10
minutes or until golden. Add the tomatoes, red pepper, oregano, sugar and
black pepper; bring to a boil. Reduce heat and simmer for approximately 15
minutes, uncovered, until the sauce is thickened slightly.
In a separate saucepan cook the linguine according to package directions.
Add shrimp (peeled and deveined) to skillet; simmer for approximately 5 minutes,
uncovered, until the shrimp are done. Drain and place in a large serving bowl.
Stir together sauce from skillet and linguine. Sprinkle with parsley.
