Hawaiian Ham Casserole
This is good for leftovers. 1 (13 1/2 oz) can chunked pineapple 3 cups ham 2 cups cooked and sliced yams 1/3 cup brown sugar 1/4 cup flour 1/2 tsp curry black pepper 2 Tbsp cider vinegar 3/4 cup water Topping: 1 cup self rising flour 2 tsps sugar salt 1/2 cup chopped Macadamias 2 eggs 1/2 cup milk 2 Tbsp melted butter Drain pineapple, save syrup. Layer pineapple, ham and sweet potatoes in a casserole. Mix brown sugar, flour, curry and pepper. Blend in pineapple juice, water and vinegar. Pour over casserole. Bake at 375 F for 20 minutes. Cover with topping and bake 20 more minutes till brown. Topping: Mix flour, sugar, salt, and chopped nuts. Beat egg yolks, stir in milk and butter. Add dry stuff and stir till moistened.
