Lemon Meringue Pie
1 prepared and baked pie shell 1/4 cup corn starch 1 cup sugar 1/4 cup lemon juice (fresh squeezed) or you made add real lemon juice to equal 1/4 c 1 tsp lemon jest Mix well 3 egg yolks--beaten--add to cornstarch mixture 1 1/2 cup boiling water--slowly add (stirring constantly)to cornstarch mixture bring mixture to boil over medium heat and simmer 5 minutes, stirring constantly. remove from heat stir in 1 Tbsp butter. Meringue 3 egg whites--beat on high speed until soft peaks form. 6 Tbsp sugar--gradually add to eggwhites, continue beating on high, to form stiff glossy peaks. spread over pie (sealing edges) broil until golden brown (be sure to watch). yields 1 pie -- Rec.food.recipes is moderated by Patricia Hill at .
