Illinois Horseshoe Sandwich

White bread, egg bread, plain or toasted or fried in butter
cooked sliced meat ( leftover hamburger, fried chicken , cooked ham,
cooked fried fish, cooked bacon etc.etc.)
Welsh rarebit cheese sauce or similar cheddar beer cheese sauce or
Velveeta cheese sauce or slices
Cooked French fries
Chopped fresh tomatoes

From what I read, popular in the 1900's, unique to Springfield Illinois
and still popular today. Well I had to try this just once. It was really
very tasty! Perhaps not healthy but quite enjoyable ! Use bread plain or
toasted or brown bread in butter. Place bread on oven safe platter. To the
bread add some cooked sliced meat of your choice or in combination. Then
liberally pour on some cheese sauce. Over that cover liberally with
French fries. Heat in hot oven . Garnish with fresh chopped tomatoes or
dabs of ketchup.

Yield: one sandwich.

Note: great for parties. Assemble sandwich variations and heat in oven
till hot!
Use prepared frozen fries, cooked in the oven and perhaps try Velveeta
cheese or similar for the sauce if you don't want to prepare a sauce from
scratch.
