Do you have any main course recipes with Chocolate, there is an upcoming
party everyone is to bring something besides dessert with Chocolate. Help


Braised Beef with Spices and Chocolate

this recipe is from the cookbook "Blue Corn and Choclate",the recipe calls
for beef,but the author notes pork or lamb work well also.

serves 6-8

2 Tb.olive oil
2 1/2-3 1/2 lbs.boneless bottom round of beef
2 lg onions
1/2 tsp. salt
1 tsp.paprika
1/4 tsp black pepper
1/2 cup tomato sauce
3 oz. orange juice concentrate
2 Tb.sherry wine vinegar
1/2 cup beef stock
1-2 oz.unsweetened baking chocolate or noir valrona
orange slices and fresh chopped parsley for garnish

Sear meat on all sides in olive oil over medium heat, when browned on all
sides, remove from pan to rest. Add the onions to the same pan, saute ,
stirring slowly, until they are soft and richly browned. Return the beef
to the pot, sprinkle with salt, pepper, paprika.Add tomato
sauce,o.j.concentrate, vinegar and stock.Bring to a simmer, them cover and
cook over low for 2-3 hours or until the meat is tender. Remove meat from
sauce and let stand for 10-15 min. keeping sauce on a very low heat, add
the chocolate stir until mixed thoroughly incorporated. Slice the meat
thinly,arrang on a heated platter,spoon the hot sauce over the meat
garnish with orange and parsley.Serve with saffron rice or steamed
potatoes.
