Marinated Grilled Tuna with Lime

2 kaffir lime leaves
1 small red chilli, chopped
2 garlic cloves, crushed
1 Tbsp. caster sugar (extra fine sugar)
3 Tbsps. lime juice
2 Tbsps. thai fish sauce
1 Tbsp. vegetable oil
4 fresh thick tuna steaks or other thick fish
3 Tbsps water
1 lime , quartered

To shred the kaffir lime leaves, first fold them lengthwise and trim off
the spine with a sharp knife. Then roll the leaves tightly lengthwise into
a cigarette and finely slice or snip. To make the marinade pound the
chilli, garlic, sugar and half the shredded lime leaves to a rough paste
in a mortar. Add the lime juice, fish sauce and oil and mix well. Coat the
tuna in the marinade and leave for up to 30 minutes, turning once. Heat
the grill and oil it. Drain the steaks, reserving the marinade. Grill on
the first side for 5 minutes, then turn and cook the other side for a
minute or two, depending on thickness, keeping it pink inside, Combine the
reserved marinade with the water and bring to the boil. Simmer for one
minute. Drizzle the tuna with the dressing and scatter with the remaining
shredded lime. Serve with lime quarters, steamed rice and vegetables or
salad of your choice.
