Default Tofu Chocolate Silk Pie

Tofu Chocolate Silk Pie

Graham Cracker-Almond Crust
1/2 - 3/4 cup crushed graham crackers
1/2 - 3/4 cup roasted almonds, ground coarsely in food processor
1-2 Tbsp melted butter
1 tsp cinnamon
juice of one-half lemon or lime.

Filling
1 lb fresh tofu
3/4 cup confectioner.s sugar
3/4 cup oil
6 Tbsp cocoa
1 Tbsp vanilla
3/4 tsp soy sauce
1/2 shot Kahlua and/or amaretto and/or creme de cacao

Whipped cream
Amaretto

Mix almonds and crackers. Add melted butter, cinnamon and lemon or lime
juice. Press into 8. or 9. pie pan. Bake approximately 15 minutes at 350 .
Blend all filling ingredients together in food processor until smooth.
Pour over crust. Refrigerate a minimum of three hours. Top with whipped
cream flavored with Amaretto.
