Fish Tacos


12 Cod or favorite whitefish
12 corn tortillas
BEER BATTER
1 cup Flour
Garlic powder -- to taste
pepper -- to taste
1 cup Beer
WHITE SAUCE
1/2 cup mayonnaise
1/2 cup yogurt
salsa
1 clove garlic -- minced
2 jalapenos -- seeded and chopped
6 tomatoes -- diced
1 1/2 teaspoons salt
1/2 onion -- minced
1/4 teaspoon pepper
2 tablespoons cilantro -- chopped
vegetable oil -- for deep-frying
GARNISH
1 head cabbage -- shredded
1 lime -- cut into wedges

Mix flour with favorite spices such as garlic powder, red or black ground
pepper. Stir the flour mixture into the beer and mix until well blended.
Wash fish by dipping in cold, lightly salted water or water with a little
bit of lemon juice added. Be sure fish is completely dry before dipping
into batter. Prepare salsa; reserve Put the vegetable oil into a deep
skillet and bring to 375F. Place fish in a single layer--do not let pieces
touch each other. Cook fish until batter is crispy and golden brown. Heat
corn tortillas lightly in a skillet or Mexican comal until they are soft
and hot. To assemble, on each tortilla layer the fish fillet, white sauce,
salsa and cabbage. Top it off with a squeeze of lime. Fold tortilla over
to serve.

Serving Size : 3

3 ounces swordfish
1/4 cup onion -- chopped
1 tablespoon lemon juice
1/2 teaspoon black pepper
1/2 teaspoon Cajun seasoning
2 cups cabbage -- shredded
1/2 cup tartar sauce
1 tablespoon ranch salad dressing
1 cup cheddar cheese -- shredded
3 flour tortillas
salsa

Spray pan with non-stick cooking spray. Add 1 tsp. butter and lightly
coat pan. Saute fish and onions. Add lemon juice, seasoning and pepper
almost immediately. Saute fish for 10-15 minutes until flaky and changes
to a white color. Combine tartar sauce and ranch dressing in separate
dish. Prepare tacos with fish, cabbage, cheese, sauce and salsa.


Fish Tacos.

Serving Size : 4

1 lb. Cod or Mahi-Mahi
3 Tomatoes
1 Onion
Paprika -- to taste
3 Cloves Fresh Garlic -- minced
2 tablespoons olive oil
2 cups Monterey jack cheese -- grated
1/2 head lettuce -- shredded

In a large saute pan add 2 Tbsp. olive oil, onion, tomatoes and garlic.
Cook for about 1 minute. Add fish and cook for 5 minutes until soft. Add
paprika. Grill tortilla until soft. Add fish and salsa, jack cheese and
lettuce.
