Subject: Sweet Sour Cabbage Soups
From: geraldine prusia Sweet Sour Cabbage Soups I have eaten this in restaurants and it has a very good flavor, but I can't determine what the spices are Sweet And Sour Cabbage Soup 3 Tbsp olive oil 1 onion, chopped 2 garlic cloves, minced 1 TSP red pepper flakes 1/4 cup balsamic vinegar 2 Tbsp brown sugar 6 cups finely shredded red cabbage 1 cup canned plum tomatoes, drained and chopped 6 cups chicken stock salt and freshly ground black pepper 1/4 cup finely chopped fresh parsley sour cream and finely chopped chives In a large heavy pot heat olive oil and cook onions until translucent. Add the minced garlic and crushed red pepper flakes and cook, stirring for one minute. Stir in the balsamic vinegar and brown sugar and bring to a simmer. Add the cabbage and stir to combine. Add the tomatoes and chicken stock and bring to a simmer. Season with salt and pepper to taste. Simmer soup for 30 to 40 minutes uncovered until cabbage is very tender. Taste soup and adjust seasonings with more salt and pepper, balsamic vinegar, or brown sugar if you like. Add parsley and stir.
