Subject: Indian cheese in Saag Paneer

My local Indian restaurant has Saag Paneer on its menu but it seems
quite different to what I have had elsewhere. Paneer does not melt and
this dish usually has pieces of the cheese mixed in. At this
particular restaurant though, the cheese is melted into the spinach
and is quite creamy. What could they be using. I really like it and
would like to make it at home. Any one have any ideas?
