Subject: Passover observant desserts and side dishes
I am not Jewish but need some Passover observant recipes for desserts
and side dishes. I appreciate it - also, it the desserts could be low
sugar,also, that would be great! I don't ask for much......

Here is a low-sugar, low-fat moist cake that is always a crowd pleaser.
Look for matzo cake meal. If you can't find it, put regular matzo meal
in a food processor and blend until it resembles flour.

Passover Apple Cake

1 1/2 cup Granny Smith apple -- peeled & chopped
1 tsp fresh lemon juice
1/2 cup + 2 tsp Splenda
1/3 cup unsweetened applesauce
1/4 cup Egg Beaters 99% egg substitute
2 Tbsp vegetable oil
1 1/2 cup matzo cake meal
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 cup raisins
1/2 cup walnuts -- chopped
cooking spray

Chop apples, Mix apples with remaining ingredients. Spray 8"x8"x2"
square pan with cooking spray. Pour in batter. Bake at 350 for 40 min.
or until toothpick inserted in center of cake comes out dry.
Cool in pan for 20 minutes. Remove from pan and continue to cool on a
wire rack. Cut into 12 squares.
