Oven-Fried Potatoes
(from Courier-News Fast Lane) 3 tablespoons olive oil 1/2 teaspoon salt 1/2 teaspoon paprika 1/4 teaspoon freshly ground pepper 4 medium potatoes, peeled only if desired Heat oven to 425 degrees. In a medium bowl, combine olive oil, salt, paprika and pepper. Cut potatoes into long strips no more than 1 inch thick, adding them to a bowl as you do. Toss the potato strips in the seasoned oil so that they are covered. Spread potatoes in a shallow baking pan and scrape any remaining oil over them. Bake 15 minutes, stirring several times, or until potatoes have a few nice brown sides. Serves 4.
