Rice, Spinach and Lime Pilaf
submitted by butterflydog 2 Tbsp olive oil 1 cup chopped onion 1/2 tsp dried thyme or 3 branches fresh chopped 1 1/2 cups uncooked Basmati rice Zest and juice from 1 lime several Kaffir Lime leaves ( optional but great flavor and aroma ) 3 cups water or vegetable broth 2 cups fresh chopped spinach 4 scallions thinly sliced salt and pepper to taste Once the spinach is added the rice becomes a pale green. A wonderful side dish for any meal. Saute in saucepot the onions in thyme in oil till onion softened. Add the rice and cook and stir to coat with the oil. Add lime juice, lime leaves and broth and bring to a boil. Cover and reduce heat to a simmer and rice is tender and absorbed all liquid about 20 to 25 minutes. Transfer to a bowl and add the lime zest and spinach, scallions and salt.
