Pumpkin Bars
Bars: 4 eggs 1 cup vegetable oil 2 cup sugar 1 can (15 oz.) pumpkin 2 cup flour 2 tsp baking powder 1/2 tsp cloves 1/2 tsp salt 2 tsp cinnamon 1/2 tsp ginger 1/2 tsp nutmeg Frosting: 1 package (6 oz.) cream cheese, softened 3/8 cup ( 3/4 stick) butter or margarine 1 Tbsp cream or milk 1 tsp vanilla 4 cup confectioners' sugar To make bars: Preheat oven to 350 F Mix eggs, oil, sugar and pumpkin. Sift together flour, baking powder, cloves, salt, cinnamon, ginger and nutmeg. Add to pumpkin mixture. Mix well. Bake in greased 12- by 18- by 1-inch jellyroll pan for 30 minutes. Frost. To make frosting: Beat together cream cheese, butter, cream and vanilla until soft.
