Buckeyes

Yield: about 7 dozen

1 (16 oz) jar creamy peanut butter
1 cup butter, softened
1 1/2 (16 oz) pkgs powdered sugar
2 cups (12 oz) semisweet chocolate chips
2 Tbsp. shortening

Beat peanut butter and butter at medium speed of an electric beater until
blended. Gradually add powdered sugar, beating until blended. Shape into
1" balls and chill 10 minutes or until firm. Microwave chocolate chips and
shortening in a microwave safe 2 quart bowl at high 1 1/2 minutes or until
melted, stirring twice. Use a wooden pick to dip each peanut butter ball
into melted chocolate mixture, coating three-fourths of balls, place on
wax paper, uncoated side up. Carefully smooth wooden pick holes. Let
candies stand until chocolate hardens. Store in an Store in an airtight
