Default Turkey-Squash Casserole

Turkey-Squash Casserole

Yield: 6 servings
Source: "Magic Menus for People with Diabetes"

2 tablespoons margarine
1 medium onion, chopped
1-1/2 pound yellow squash, sliced
1 cup shredded carrots
3 cups Pepperidge Farm stuffing mix
1 cup fat-free sour cream
1 egg
1 cup fat-free reduced-sodium chicken broth
or enough to moisten
12 ounces skinless turkey breast, cubed

Preheat oven to 375 degrees F. Saute onion in margarine. Mix with
remaining ingredients. Pour into 2-quart baking dish coated with nonstick
cooking spray. Bake 30-40 minutes or until bubbly.

g, Cholesterol: 73 mg, Carbohydrate: 37 g, Dietary Fiber: 5 g, Sugars: 9
