Easy Rhubarb Pie
submitted by butterflydog 3 cups chopped rhubarb stems 1 1/3 cup sugar 1/2 Tbsp dry strawberry gelatin powder 3 rounded Tbsp tapioca cinnamon Unbaked double crust pastry Mix the first 4 ingredients together and place in prepared pastry lined bottom crust ( 9 inch pie pan ). Sprinkle cinnamon over filing. Place on top crust, crimp edges well and slash top well to let steam escape. Bake in a 350F oven until crust is browned and the filling starts to bubble. Cool completely. Chill before serving if desired. Yield 6 servings.
