Pinchos Morunos

2 lbs pork tenderloin cut into cubes ( lamb, beef, poultry works well, too
)
Marinade:
1/4 cup olive oil
3 Tbsp ground cumin
2 Tbsp ground coriander
1 tsp sweet paprika
1/4 tsp cayenne
1 tsp ground turmeric
2 tsp dried oregano
3 garlic cloves minced
1/2 tsp ground black pepper
1/4 cup chopped flat leaf parsley
1/4 cup fresh lemon juice
salt to taste
Lemon Wedges for Garnish

Marinade meat cubes 2 to 4 hours. Preheat grill or broiler, place cubes
on wooden skewers and grill or broil them 4 to 5 mins each side for the
pork or desired meat is done. Serve meat skewers hot with lemon wedges on
the side. Yield: about 6 servings
