Potatoes and Chicken Fiesta
1 (4.9 oz) box scalloped potatoes 2 1/4 cups boiling water 3/4 cup milk 1/3 cup shredded Monterey Jack cheese 1/3 cup shredded Cheddar cheese 1/3 cup Chunky salsa 2 (5 oz) cans chunk breast of chicken, drained Heat oven to 400 F. Stir together Potatoes, Sauce Mix and boiling water in ungreased 2-quart casserole. Stir in remaining ingredients. Bake uncovered 50 to 55 minutes or until potatoes are tender.
