Almond Cookies
Chinese Almond Cookies Request From: "Ashlee C. Haywood" > I love the almond cookies I get at Chinese restaurants. Does anyone Have a recipe for them so I can make them at home? Almond Cookies Almond cookies are lighter and more delicately flavored than most cookies. This easy to make recipe for Almond cookies comes courtesy of Carol Pereginelli, About's Guide to Desserts and Baking Makes 30 - 35 cookies 2 1/2 cups flour 1 cup sugar 1/2 teaspoon baking soda 1 cup butter 2 eggs, beaten 1/8 teaspoon salt 1 tablespoon almond extract 1/4 pound whole, blanched almonds Preheat oven to 325 degrees Fahrenheit. In a food processor, mix the flour, sugar, butter, salt and baking soda until it forms little balls. Add the eggs and almond extract. Roll out the dough on floured surface. Cut with 2 1/2 inch cookie cutter. Place on greased cookie sheet and place an almond in center of each cookie. Bake for 25 minutes. Chinese Almond Cookies 2 3/4 cup flour 1 cup sugar 1/2 tsp. soda 1/2 tsp. salt 1 cup butter 1 slightly beaten egg 1 tsp. almond extract 1/3 cup slivered almonds Bake in oven at 325 degrees for 15-18 minutes. Glaze: Powdered sugar with milk and almond extract. Preheat oven to 350 degrees. Sift flour, sugar, soda and salt into a large bowl. Stir in shortening and knead for 8 to 10 min. Combine eggs and almond extract; stir into flour mixture, mix well. Shape into balls using a tablespoon of dough for each cookie. Place onto an ungreased baking sheet and make a depression in the middle of each cookie. If you don't wish to use red dye you may garnish with a piece of blanched almond.
