Chocolate Mincemeat Bars

1/2 cup shortening
1 cup sugar
3 eggs
2 cups all-purpose flour
2 teaspoons baking soda
1 3/4 cups mincemeat
2 cups semisweet chocolate chips
confectioners' sugar

In a mixing bowl, cream shortening and sugar. Add eggs, one at a time,
beating well after each addition.
Combine flour and baking soda. Gradually add to creamed mixture.
Beat in mincemeat. Stir in chocolate chips.
Spread into greased 15 x 10" baking pan.
Bake at 375º for 25 minutes or until golden brown. Cool on a wire rack.
Dust with confectioners' sugar.

Mincemeat Bars

2 1/2 cup Bisquick
1 cup sugar
1 egg
3 tablespoon shortening -- part can be butter
1/4 cup milk
1 1/2 cup prepared mincemeat
Icing
1/4 cup powdered sugar
2 tablespoons warm water or milk

Heat oven to 375F.
Mix well all ingredients except mincemeat.
Pat half into a greased 9 x 13 pan, to within 1/2 inch of edges.
Spread with mincemeat.
Pat out other half of dough on waxed paper to same size.
Turn over on mincemeat. Pull off waxed paper.
Bake 30 minutes.
Frost with thin powdered sugar icing made by mixing powdered sugar and
water
or milk.
While warm, cut into bars.

Mincemeat Cookie Bars

1 1/2 cups flour
1 3/4 cups rolled oats
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter -- room temperature
1 cup packed light brown sugar
1 teaspoon vanilla
1 cup prepared mincemeat

Preheat oven to 325 degrees. Lightly grease a 13x9" baking pan.
Combine the flour, oats, baking powder and salt.
In a large bowl, cream butter and brown sugar. Beat in the vanilla.
Gradually blend in the dry ingredients.
Spread half of the dough evenly in the bottom of prepared pan. Spread
mincemeat over the top, and spread remaining dough over the mincemeat.
Press
down lightly.
Bake for 20-25 minutes, until toothpick inserted in center comes out
clean.
Cool slightly, then cut into bars and transfer to wire rack to cool.

1/2 teaspoon baking soda
2 cups honey -- warmed
1 cup vegetable shortening
3 large eggs
1 cup prepared mincemeat

Preheat oven to 350 degrees. Lightly grease cookie sheets.
Combine flour and baking soda.
In a large bowl, beat the honey and shortening. Beat in the eggs.
Gradually
blend in the dry ingredients. Stir in the mincemeat.
Drop by spoonfuls 1 1/2" apart onto cookie sheets.
Bake for 12-15 minutes until lightly colored. Transfer to wire racks to
cool.

4 cups all-purpose flour
6 tablespoons sugar
1 pinch salt
6 tablespoons vegetable shortening
2 teaspoons active dry yeast
1 cup milk
2 large eggs
6 tablespoons prepared mincemeat
2 large egg yolks -- beaten
1/2 cup almonds -- ground fine
sugar for sprinkling

Preheat oven to 375 degrees. Lightly grease baking sheets. In a large
bowl, combine flour, sugar and salt. Cut in shortening. Put yeast in a
medium bowl. In a small saucepan, heat the milk until tepid. Pour over the
yeast and stir to dissolve it. Beat in the eggs. Add yeast to the flour
mixture and work to a soft dough. Knead 3-5 minutes. On a floured surface
roll out he dough to a thickness of 1/4". Using a sharp knife, cut into 2"
squares. Place a spoonful of mincemeat in the center of half the squares.
Cover with remaining squares, pinch to seal the edges. Place 1 1/2" apart
on the prepared sheets. Brush with beaten egg yolk and sprinkle with
ground almonds. Bake for 18-20 minutes, until golden brown. Sprinkle with
sugar. Transfer to wire racks to cool.
